Avocado Soup with Shrimp

Easy and fresh, this soup is a go-to for ripe avocados. Ready in under 30mins, it’s a favorite in our kitchen for lunch or weeknight dinner!

Ingredients

  • 1/2 onion, diced
  • 1 large ripe avocado
  • 6 large shrimps, shell on
  • Garlic salt
  • Chili powder
  • Paprika
  • Cumin
  • White pepper
  • Cilantro
  • Olive oil
  • Greek yogurt or sour cream

Instructions

1) Heat up 1.5qt water in pot to boil

2) Peel shrimps and add shells to pot

3) Heat up separate pan to medium heat with olive oil. Add diced onion and sauté till soft and translucent

4) Season shrimp with 1/2 tsp garlic salt, 1/2 chili powder, and 1/8 tsp of each: cumin, paprika, white pepper

5) Cut avocado into cubes and add to onions. Season with salt and pepper and mix together

6) Turn off heat on pot of water and remove shrimp shells. If using a blender add pan ingredients into blender and soup base slowly while blending. If using an immersion blender, add pan contents into pot and blend in pot directly. Add fresh cilantro with stems (6-9 springs)

7) Reheat pan to medium-high with more olive oil, and add seasoned shrimp. Cook shrimp on each side for 3 mins.

8) Laddle soup into bowls, and transfer shrimp into bowl. Drizzle any remain oil onto surface of soup.

9) Finish bowl with a scoop of Greek yogurt or sour cream.
